Veganuary. How I celebrated with a chef.

A With The Chef guests’ perspective:

If you’re like me, you’ve probably heard of Veganuary. It’s the campaign that inspires and supports people to try to eat vegan for January and beyond. Maybe your New Year’s resolution was to go plant-based all of the way. Or maybe you’re just curious about what veganism is all about. If you’re considering incorporating plant-based options into your life, read on.

Whatever your motivation, I have a great suggestion for how you can celebrate Veganuary with a chef. Why not join Chef Alysa Ferguson at Down2Earth Plant Parlour for an unforgettable plant-based dining experience. I did it with a few friends and it was delicious and memorable.

Chef Alysa is not only a talented and creative vegan chef, but also a warm and friendly host. You’ll feel welcome and comfortable from the moment you arrive. We were greeted with a warm smile and a beautiful cocktail to toast the evening. She took us through the restaurant, sharing her story of her journey to plant-based. We sat at a long table and were joined by other guests who had also booked the event. The restaurant is located in Langley just 5 minutes from the highway and a quick 45 minutes from Vancouver. It’s definitely worth the drive!

Oh what a night!

The event is not a cooking class, but rather a chef-hosted meal. Here you get to enjoy a delicious and diverse vegan menu. It’s paired with local wine, and you learn from Chef Alysa’s personal and professional insights on vegan cooking and living. She told us her story of how she transitioned to a plant-based lifestyle and how it changed her health, her career, and her outlook on life. She also shared some valuable tips and tricks for preparing, sourcing, and adjusting vegan recipes, whether you want to fully transition your diet or just incorporate more plant-based meals into your week.

The food was absolutely amazing. We savoured a tasting menu that featured dishes from Italy. It was a nod to her heritage and helped weave in her personal journey. Each dish was beautifully presented and bursting with flavour and texture.

I was blown away by how Chef Alysa was able to create such a satisfying and varied menu, And it catered to different tastes and preferences. She proved that vegan food can be delicious, nutritious, and fun. You don’t have to sacrifice anything when it comes to eating vegan.

The event lasted for about 2.5 hours, but it felt like time flew by. We had a great time chatting with Chef Alysa and the other guests, sharing our stories and experiences, and laughing a lot. It was a very social and enjoyable night, and I felt like I made some new friends along the way.

Veganuary with a chef: a delicious idea

I highly recommend this event to anyone who wants to celebrate Veganuary in a special and memorable way, or who just wants to try something new and exciting. You don’t have to be vegan to enjoy this event, you just have to be open-minded and willing to explore the amazing possibilities of plant-based cuisine. Trust me, you won’t regret it. You might even end up saying, like I did, “I can’t believe it’s vegan!”
